Giant Peanut Butter Cookie ! Delicious & Healthy!

2 cups Spelt Flour

½ cup Hemp Hearts

½ cup Flax

½ cup dates

1 egg or 4 egg whites 4 tbsp peanut oil (Any other oil can be substituted)

2 cups organic peanut butter

1 cup Soy or Almond milk

1 tsp baking soda

I would definitely recommend using an electric mixer, (doesn’t have to be professional-grade) since doing this by hand could be a little tough lol. Put all ingredients in no particular order into the mixing bowl place on mixer and mix until everything is mixed together fully. I made this consistency a little thicker since I like the cookie to be dense. Preheat oven to 350, place the batter onto the parchment paper within the round pan, flatten to make even in pan and place in oven for 20 minutes, take out, let cool and ready to serve.
