PEANUT BUTTER & LIVER COOKIES


PEANUT BUTTER LIVER COOKIES

All ingredients are organic

2 lbs Chicken Livers

½ cup organic carrots

2 cups organic peanut butter

2 tbsp ground cinnamon

1 cup chicken stock

1 tbsp coconut oil liquified

2 cups quinoa flour

1 cup ground flax seeds

1 cup hemp hearts

1 tbsp sea salt

1 tsp baking soda

1 organic egg


In a mixing bowl (I strongly recommend using a mixer) add all the ingredients together and blend on medium speed at first and then to high. Once all mixed together, take the mixture and flatten with utensil and cut out the batter with the molds (any shapes you have, the dogs don’t care). Recommendation to dip the molds in oil to make sure the batter doesn’t stick to them. Preheat the oven to 325 degrees and place pan into oven for 15 minutes.


Health Benefits: Hemp seeds are rich in healthy fats and essential fatty acids. They are also a great protein source and contain high amounts of vitamin E, phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron and zinc. Flaxseed is commonly used to improve digestive health or relieve constipation. Flaxseed may also help lower total blood cholesterol and low-density lipoprotein (LDL, or "bad") cholesterol levels, which may help reduce the risk of heart disease.


*The Middle-Eastern spice blend called za’atar ingredients are: sesame seeds, ground sumac, and dried za’atar (an herb with a savory-thyme-oregano flavor). You can buy za’atar blends in Middle-Eastern markets, but you can also make it at home. In the blend shown above, thyme and oregano or marjoram stand-in for the za’atar herb, which is rarely available in the United States. To make about 1/2 cup of za’atar, put 3 Tbs. dried thyme, 1 Tbs. lightly toasted sesame seeds, 1 Tbs. ground sumac, 1/2 tsp. dried oregano or marjoram, and 1/4 tsp. kosher salt in a spice grinder. Pulse a few times to mix and break up some of the seeds—there should still be many whole seeds visible. Store in a cool, dark place for up to six months. If sumac is unavailable, substitute 2 Tbs. dried lemon peel.
